Today, a new vision by acclaimed interior designer Lázaro Rosa-Violán brings this remarkable heritage into the present. The hotel's 82 rooms are the final chapter of this journey: peaceful sanctuaries designed for rest after a day immersed in the city. Fonda España, our signature restaurant, pays tribute to the great traditional *fonda* of Spain through a culinary concept led by renowned chef Martín Berasategui. Under the direction of Executive Chef Edu Rodas, the restaurant celebrates ingredient-led cuisine with contemporary sensibility, refined technique, and deep respect for the finest local produce.
